Fresh Apple Bread
Recipe of Mrs. Louann (Terry) Shive, Salisbury, N.C.
1 cup sugar 
half cup shortening
2 eggs beaten 
1 cup ground or grated N.C. apples (suppose others o.k. too) 
2 cups sifted flour 
half teaspoon of salt 
1 teaspoon soda 
1 cup broken pecan pieces 
1 and a half tablespoons buttermilk 
half teaspoon vanilla 

Topping: 3 tablespoons sugar and 1 teaspoon cinnamon 

Cream sugar and shortening; add eggs and apples. Sift dry ingredients together. Mix with sugar mixture. Add pecans. Stir in buttermilk and vanilla. Pour into greased 10 x 6 x 3 inch loaf pan. 

Topping: Mix sugar and cinnamon; sprinkle over top before baking. 

Bake for 1 hour at 350 degrees or less if you think it done in the center (can be checked by pushing thin knife blade into the centerr: if it comes out clean, it is done). Makes 1 loaf.
